I finally had some time to try a new recipe that might be worth putting on here.
I’m a big fan of blueberry muffins. And I really used to like the ones you get at Starbucks. As far as I remember, you can get some kind of a “low calorie” version in the UK but even those are still loaded with sugar and white flour.
These aren’t and they’re still pretty good!
100g soft butter
3 table spoons of birch sugar
a few vanilla FlavDrops
and mixed those until fluffy.
Then I added
2 piled table spoons of almond flour
3 scoops of vanilla whey
1/2 tea spoon baking powder
I mixed it all until a smooth dough. If it’s a little too firm, add 1-2 table spoons of milk or cream.
Add as many blueberries as you like, then fill your muffin pan and bake the muffins for about 20 minutes with 180°C.
